My favorite interior is one where the center console was removed entirely and the dash pad extended and recovered to match, so basically the passenger dash pad extended from the door to the gauge hood. I can't find the pic though.

5' 11", but I have a smaller steering wheel, armrest-less door cards, foamectomied driver seat, and flipped ashtray lid. ...Okay so that last one isn't so important regarding height, but it is more comfortable.
